Irish Slow-Cooker Oatmeal (Overnight recipe)

Ingredients (use vegan versions):

    2 cups steel cut oats
    6.5 cups water
    1/2 cup brown sugar (plus more for serving)
    1 teaspoon cinnamon
    1 teaspon vanilla extract (optional)
    2 apples (I use granny smith), peeled, cored and diced
    1/2 cup toasted almonds, chopped (optional)
    2 bananas, sliced (optional)
    Non-Dairy milk (for serving)

Directions:

Stir all the ingredients into the slow cooker (Crock Pot, Smart-Pot, etc.) EXCEPT for pecans, bananas and non-dairy milk. Cook overnight on low setting for 8-9 hours.π

Umm... I'm a bit of a newbie and not quite sure where to put this - I can't add it to the recipe directory because it isn't mine, and I don't see a general thread for internet recipe reviews, so feel free to move this, mods, if I got it wrong:

I just cooked this quick, simple recipe from BBCgoodfood.com, and maaaannn is it good!

I salted and drained the eggplant slices before grilling, and I used provamel yogurt (unsweetened), which I strained for a couple of hours beforehand to create the 'greek style' thickness. YUM. I served it with roast potato wedges which worked very well, next time I think I'll get some turkish flatbread to go with it, which I reckon would be even better. I can't wait to cook this for friends (I always experiment on myself before cooking something for other people, so this batch was mine, all MINE )

So, I never much cooked with alcohol before, but slowly & surely I've been wanting to try recipes that call for dry white wine, sherry, red wine, etc. I don't drink myself (definitely not wine...), so... what brands of cooking wine do you guys use?

Originally I got some Chinese rice wine for some Asian recipes, but I'm pretty sure I can't assess if it's vegan (import), and it probably wouldn't work for recipes that call for red wine. That's really the only sub option I have currently, other than whiskey (no way!).

Arizona Immigration Law..Love it or Hate it?

Well, as you all probably know, the immigration law passed in Arizona earlier this year has caused controversy all over the country. I am wondering what you all think about the law.

Being a first generation American whose family struggled to come to America, I was not a big fan of the law but I came to change my mind.

I read the law myself and realized that there is nothing in it that goes against the federal law. I understand that the law can easily be abused, promoting racism and stereo typing; however, any law can be abused and we can not let that fear stop us from creating and enforcing laws.

Easy Sesame Noodles

Ingredients (use vegan versions):

    1/4 cup peanut butter (skippy works very well)
    1-1.5 Tbs soy sauce
    1 tsp sesame oil
    1 small of garlic
    1/2 Tbs corn syrup or agave nectar (to taste)
    noodles of choice (keep in mind lo mein noodles have egg in them)
    sesame seeds

Directions:

I'm a little fuzzy on the measurements because I don't usually use measuring stuff. Experiment with amounts and see what tastes good for you.


Put a pot of water up to boil for the noodles. When it boils add the noodles, you know the drill.

Chop up the garlic. In another pan saute the garlic in the sesame oil. Add peanut butt...

Kale and Carrot Salad

Ingredients (use vegan versions):

    1  bunch Kale
    1 cup shredded carrot
    2 Tbl Lime juice
    2 Tbl Tahini
    1Tbl Tamari
    2 tsp grated ginger root
    1 tsp rice vinegar
    2 tsp sesame oil
    1-2 Tbl sesame seeds

Directions:

1. Blanche kale 1 minute in boiling water; remove to ice bath; drain, pat dry.
2. Place kale and carrot in serving bowl.
3. Blend remaining ingredients well.  Toss with vegetables.
4. Rest at room temperature at LEAST 15 minutes; as long as an hour.
5. Sprinkle with sesame seeds or other garnish; serve.

Ingredients (use vegan versions):

    4 1/2 cups rolled oats
    1/2 cup ea: wheat germ, oat bran, other rolled grain
    1 cup dried apples, torn into small pieces
    1/2 cup almonds
    1/4 sunflower seeds
    1/4 cup sweetened or unsweetened cherries
    unsweetened plain yogurt of choice (soy, rice, coconut...)
    water

My love of muesli parallels my love of Sonic Youth. It took persistence, an open mind, and lots of experimentation. I started out with the boxed sweetened Swiss muesli, progressed to unsweetened bulk bin muesli and ended up here.

It was a little over 2 years ago, she was out in San Francisco, and we met up with mutual friend Melisser for karaoke! I am pretty sure that I embarrassed myself beyond belief singing something like Nelly's Hot in Here, complete with stripping off of clothes. BUT I'LL NEVER ADMIT IT. Oh wait. Anyway, she was an absolute delight and tons of fun and it's so cool to get to know her better here. Man, all the best people turn out to be VegWebbers. True story. There was a coffee shop where I grew up that had the most amazing picture of a seductive banana stripping off its peel. It was funny, bizarre, and the best conversation piece. I gossiped with countless other diners, hypothesizing on what scenarios might lead to a banana stripping. Was she simply getting ready for a shower? Or was this something less seemly, like an illicit affair with a kumquat? Enquiring minds! I may or may not have had many fantasties that involved stealing the picture and making it mine. This totally fabulous apron from shesocreative (http://www.etsy.com/listing/51086923/salad-dressing-clever-apron-in-packaged) strongly reminds me of my beloved stripping banana. The drawing on the apron depicts different vegetables getting dressed, with the caption, "Salad Dressing." Hilarious! I seriously don't know why I love this stuff so much but you need to own that apron to understand my joy. Besides, what goes better with all the summer grilling and soul-food eats than an apron? Adorable and functional? Yes, please!
