  • 1 cup unsweetened coconut flakes
  • 1/4 cup maple syrup (or other liquid sweetener like agave or coconut nectar)
  • 1/4 cup raw cacao powder (can sub for unsweetened cocoa powder)
  • 1/4 cup coconut butter (you can make your own, see below for recipe)
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • 1/4 tsp cinnamon (optional)


  1. Stir ingredients together.
  2. Place in refrigerator for 10-15 minutes to stiffen up (easier to form balls this way)
  3. Form into balls about 1.5 inches wide.
  4. Place on a wax paper sheet on a plate and put into the freezer for about 2 hours.
  5. Serve garnished with coconut flakes and cinnamon, if desired. Store in refrigerator or freezer.

Makes about 1 dozen

Option: you can make these plain by omitting the chocolate.


Coconut butter


  • 2 1/2 cups unsweetened shredded coconut


In a food processor, blend up the shredded coconut, scraping the sides down every few minutes. It can take up to 20 minutes. You can also use a blender and it takes about half the time, but you have to scrape down the sides more often (and tamper for those using a vitamix), and it only works well for larger batches.
